Ingredients
1 lb lean ground beef
3/4 c low fat ricotta cheese
2 tbsp oregano dry or fresh
1 1/2 tsp salt
1 tsp black pepper
3 cloves crushed garlic
3 tbsp chopped onion
1/2 tsp baking soda
1 egg large
1/4 c Italian parsley chopped
2 cups no sugar added tomato sauce
1/2 cup low fat shredded mozzarella cheese
Preparation
Step 1
In a large mixing bowl combine the lean beef, ricotta cheese, oregano, salt, garlic, onion, baking soda, and egg. Use your hands and mix well until everything is combined.
Step 2
Rub your hands with olive oil. Then form meatballs, the size of ping pong balls.
Step 3
Drop meatballs into simmering tomato sauce. Cover and cook for 15 minutes.
Step 4
Transfer meatballs to an oven safe dish. Sprinkle with cheese and parsley. Broil on high for 5 minutes or until the cheese is melted.
